Honey and almonds in abundance, all kinds of spices to give them fragrance. Sugar and egg-white in an airy cloud. White wafers to enclose them in a circle. There're Copate. Sacred flavour, profane flavour: these honeyed sweetmeats were invented in a convent, in the Middle Ages, amongst the Carmelite nuns, where the art of pastry-making flourished - or, it is also said, amongst the Oblate sisters, who presented them to their most generous visitors. For Copate are a real taste of Paradise, with their two paper-thin wafers enclosing a soft, yet crunchy mixture.
